Summer Strawberry & Spinach Salad with Collagen Dressing

Summer is synonymous with garden gatherings, which means spending quality time outdoors and basking in the sun with friends and family – what could be better?

As we prepare to attend (or host!) another summertime BBQ, we’re also attempting to find the perfect dish that will undoubtedly wow fellow guests. Enter this healthy strawberry and spinach salad, which pairs perfectly with our homemade collagen-infused dressing.

It’s an easy-to-make, seasonal salad that requires just four ingredients, including sweet strawberries, which are the star of the dish.

To offset the sweetness of the berries, we paired this salad with a slightly tangy dressing, which can also be used to top off grilled chicken and salmon. This nutrient-dense dressing calls for just six ingredients, including a fermented food (sauerkraut brine!), olive oil and avocado (for a creamy consistency), among others. Collagen Salad Dressing Recipe | Strawberry & Spinach Salad

Ingredients

  • 4 large handfuls of spinach
  • 75 g strawberries, sliced
  • 60 g cucumber, thinly sliced
  • 2 tbsp dill, finely chopped
  • 1 scoop Vital Proteins® Collagen Peptides
  • 1/2 ripe avocado
  • 1-2 tbsp extra virgin olive oil
  • 2 tbsp sauerkraut brine
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Method

  1. First, wash your spinach and cucumber. In a large salad bowl, combine the spinach, strawberries, cucumber and finely chopped dill.

  2. To make the dressing, add the Collagen Peptides, avocado, olive oil, sauerkraut brine and salt and pepper to a high-speed blender and blend until you have a creamy consistency. You may need to add a tablespoon of water for an even creamier dressing.

  3. Note: you can make the collagen salad dressing ahead of time and it will last in the fridge for approximately 3-4 days.
