What is collagen?
Collagen is an important part of our connective tissue and plays a fundamental role in promoting strength, flexibility and mobility. Collagen is a structural protein and consists of 18 amino acids. In particular, it is rich in 3 of them: glycine, proline, and hydroxyproline.
These amino acids form long polypeptide chains, which are responsible for the structure of collagen fibers. These proteins are essential for the support and integrity of tissues, particularly muscles, tendons, bones, joints, and skin. The main sources of collagen are cattle (cows) and marine animals (fish).
Why is collagen intake important?
Over the years, our bodies become less efficient at collagen production – collagen decline can lead to fine wrinkles and sagging skin. Our food preferences have changed over time. Centuries ago, people fed on animal bones, organs, and tendons to enrich their daily food with collagen-rich animal sources.
