Football fever has well and truly landed – and we’re very excited about the many opportunities for tasty viewing snacks! You might be dreaming of loaded nachos and pizza, but we’re taking a slightly healthier approach to help us stay on track to our goals.

Look no further than our better-for-you picks, which include Cauliflower Nachos, a dairy-free Spinach and Artichoke Dip and a Crustless Pizza Bake. Each recipe calls for a scoop or two of collagen, specifically our hydrolysed Collagen Peptides or Beef Gelatin.

Oh, and did we mention they’re the perfect health-conscious complement to these delicious dishes? Yep, you’re in for a treat.

1. Dairy-Free Spinach & Artichoke Dip

Spinach and artichoke dip with Vital Proteins Collagen Peptides

Ingredients:

  • 80g frozen chopped spinach, defrosted and drained
  • 400g can artichoke hearts, drained and chopped
  • 120ml mayonnaise
  • 1 clove garlic, peeled and crushed
  • 120g dairy-free cream cheese (room temperature)
  • 2 scoops Vital Proteins® Collagen Peptides
  • 1 tsp lemon juice
  • ½ tsp onion powder
  • ¼ tsp garlic salt
  • ¼ tsp fresh ground pepper
  • Chopped chives (optional)
  • Dairy-free grated cheese (optional)
  • Crackers, assorted veggies for dipping

Method:

  • Preheat the oven to 180°C.
  • Lightly grease a small baking dish.
  • In a mixing bowl, mix together the cream cheese, mayonnaise, garlic, garlic salt, onion powder, lemon juice, salt, pepper and Collagen Peptides.
  • Add the spinach and artichoke hearts and fold in until fully mixed.
  • Transfer the mix to the baking dish and top with the grated cheese.
  • Bake for 20 minutes or until lightly browned.
  • Garnish with the chopped chives.
  • Serve with crackers and assorted veggies. Enjoy!

2. Cauliflower Nachos with Collagen Buffalo Sauce

Ingredients:

  • 1 head cauliflower, divided into florets
  • 2 tbsp coconut oil
  • 1 tbsp soy sauce
  • 1 tsp unfiltered apple cider vinegar
  • ¼ tsp onion powder
  • ½ tsp garlic powder
  • 235ml hot sauce
  • ¼ tsp cayenne pepper
  • 2 scoops Vital Proteins® Collagen Peptides

Method:

  • Preheat the oven to 200°C. Place the cauliflower florets onto a baking tray and bake in the oven for 10-15 minutes or until crisp.
  • Meanwhile, in a saucepan, add all of the ingredients and whisk to combine over a medium heat.
  • Remove the cauliflower tots from the oven and drizzle the sauce over.
  • Garnish with your favourite nacho toppings and enjoy!

3. Crustless Pizza Bake

Ingredients:

  • 450g marinara sauce
  • 2 scoops Vital Proteins® Beef Gelatin
  • 450g cooked chicken, sliced into chunks
  • 450g cooked Italian sausage, crumbled
  • 1 large onion, peeled and diced
  • 1 green pepper, sliced
  • 1 red pepper, sliced
  • 170g black olives, halved
  • 170g shredded cheese (mozzarella, jack, and/or cheddar work well)
  • 55g pepperoni
  • 55g pickled jalapeños

Method:

  • Preheat the oven to 180°C. Have a 9×13″ baking tin ready.
  • Fry the chicken and sausage over a medium heat until cooked through. Leave the grease from the meat in the pan.
  • Mix the marinara sauce and the beef gelatin together in a medium bowl. Set aside.
  • Add the cooked chicken and sausage to the baking tin. Stir together well.
  • Sauté the chopped onion and bell pepper in the leftover grease from the meat until translucent. Layer over top of the meat and scatter the black olives over the top.
  • Stir the reserved marinara sauce. If it appears very thick, add a few tablespoons of water to smooth it out. Pour the sauce over the vegetables in the baking tin.
  • Next, add the grated cheese. Then lay out the pepperoni and pickled jalapeño.
  • Bake for 20 minutes, or until golden and bubbly. Leave to cool in the pan for 10 minutes before serving.
