Festive Collagen Pancakes Recipe

Ingredients

  • 240 g rolled oats
  • 1 tbsp coconut oil
  • 360 ml almond milk
  • 1 egg
  • 1 scoop Vital Proteins® Collagen Peptides
  • 1 tbsp cinnamon
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 80 g raspberries (optional topping)
  • 45 g pomegranate (optional topping)
  • 30 g pumpkin seeds (optional topping)

Method

  1. In a food processor, combine all of the ingredients and blend until smooth.

  2. Add the coconut oil to a frying pan and cook over medium heat.

  3. Scoop in about around a quarter of the mixture and cook the batter on both sides for up to 5 minutes.

  4. Repeat with the remaining pancake batter, then remove the pancakes from the pan, finish with your chosen toppings and enjoy.
