Festive Collagen Pancakes Recipe

Ingredients
240 g rolled oats
1 tbsp coconut oil
360 ml almond milk
1 egg
1 scoop Vital Proteins® Collagen Peptides
1 tbsp cinnamon
1 tsp baking powder
1 tsp vanilla extract
80 g raspberries (optional topping)
45 g pomegranate (optional topping)
30 g pumpkin seeds (optional topping)
Method
In a food processor, combine all of the ingredients and blend until smooth.
Add the coconut oil to a frying pan and cook over medium heat.
Scoop in about around a quarter of the mixture and cook the batter on both sides for up to 5 minutes.
Repeat with the remaining pancake batter, then remove the pancakes from the pan, finish with your chosen toppings and enjoy.
