We’re coming in hot with a spin on your typical morning breakfast! Eggs are one of my favourite ways to kick off the day. Not only are they delicious, but their versatility allows us to enjoy them in a variety of meals.

One way I love eating my eggs is to cook them in a pan with simmering tomatoes and multiple spices. This is shakshuka, a traditional Middle Eastern recipe that combines simple, nourishing ingredients like tomatoes, onions, garlic, and spices in an egg base.

Shakshuka is seasoned with bold flavours and delivers a heat kick thanks to the cayenne, paprika and chilli powder. Feel free to control the dish’s spice level by adding as little or as much spice as you desire.

What I love about this recipe is the simplicity of the ingredients, as well as the whole foods that are in it. And although Shakshuka is commonly served for breakfast, it still makes a wonderful lunch and dinner option as well. This gorgeous Middle Eastern dish is one that you will want to make over and over again.

I decided to add a twist on the traditional Middle Eastern Shakshuka and add in some Vital Proteins® Collagen Peptides. It is flavourless and easily soluble in hot and cold liquids and foods, making it an ideal add-in to any meal or beverage.

Collagen Shakshuka Recipe




  • 4-5 eggs
  • 2 tbsp olive oil
  • 1/2 onion, peeled and diced
  • 2 garlic cloves, peeled and crushed
  • 1 red bell pepper, chopped and deseeded
  • 2 tbsp tomato puree
  • 1 can chopped tomatoes
  • 2 scoops Vital Proteins® Collagen Peptides
  • 1 tsp cumin
  • 1 tsp chilli powder
  • 1 tsp cayenne pepper
  • 1 tsp paprika
  • 1 tsp thyme
  • Salt and pepper
  • Handful of chopped coriander
  • 40 g feta cheese


  1. In a medium frying pan or cast-iron skillet, heat the olive oil over a medium heat.

  2. Add in the diced onion and crushed garlic and cook until they become soft.

  3. Once the onion and garlic are cooked, add in the chopped pepper, then mix in the Collagen Peptides and spices. Mix well and cook for 5-8 minutes or until the pepper is soft.

  4. Add in the tomato puree and chopped tomatoes. Mix all of the ingredients together and cook until bubbling. Reduce the heat, then crack each egg into the sauce.

  5. Cook over a medium heat for 10-15 minutes or until the eggs are cooked through. Garnish with chopped feta and coriander.

  6. Serve and enjoy!
