Collagen Coconut Muffins Recipe
*CONTAINS EGGS, NUTS, MILK AND OATS
235ml vanilla almond milk
1 tsp vanilla extract
210g oat flour
1 tsp baking powder
2 scoop Vital Proteins Coconut Collagen Creamer
1/4 tsp salt
Shredded coconut – for topping
Preheat the oven to 200°C.
Mix all of the wet ingredients for the muffins in a mixing bowl until smooth.
Add the dry ingredients for the muffins to the bowl and mix until well combined.
Pour the mixture evenly into a greased muffin pan (muffin liners optional).
Top each muffin with the desired amount of coconut shreds.
