Collagen Chocolate Chip Pancake Doughnuts Recipe

Ingredients 
  • 2 eggs
  • 1/2 banana
  • 3 tbsp maple syrup
  • 1 tbsp coconut oil
  • 1 tsp baking powder
  • 90g oat flour
  • 40g ground flaxseed
  • 2 scoops Vital Proteins Collagen Creamer® in Vanilla
  • 4 tbsp chocolate chips
  • 3 tbsp maple syrup (for the topping)

Method

  1. Preheat the oven to 180°C.

  2. Mash the banana in a bowl with a fork.

  3. Mix all of the wet ingredients in with the banana until smooth.

  4. Add the dry ingredients for the doughnuts (besides the chocolate chips) to the bowl and mix until well-combined.

  5. Fold in the chocolate chips and pour the mixture evenly into a greased doughnut pan.

  6. Bake the doughnuts for 15 minutes.

  7. Remove the doughnuts from the oven and let them cool for 5 minutes.

  8. Carefully remove them from the pan to cool for an additional 5-10 minutes.

  9. Top with maple syrup for that perfect pancake flavour. Forks up!
