Collagen Brownies Recipe
Recipe makes 12 collagen brownies
- 2 organic eggs
- 200g almond flour
- 2 handfuls dairy-free chocolate chips
- 2 tsp organic vanilla extract
- Pinch of sea salt
- 50g organic coconut oil (melted)
- 60g organic peanut butter (melted)
- 180g coconut sugar
- 1 tsp baking soda
- 4 scoops Vital Proteins® Collagen Peptides
- Preheat your oven to 180°C and line a medium-sized ovenproof dish with greaseproof paper.
- Mix all of the wet ingredients in a large mixing bowl or in your standing mixer. Make sure that the eggs are at room temperature so that the coconut oil does not re-solidify once added.
- Add in salt, collagen and baking soda and mix well. Add in the almond flour gradually, mixing in between each addition.
- Pour the mixture into your ovenproof dish and add in a handful of the chocolate chips into the tin and bake for 45 minutes.
- Optional topping: allow to cool, then melt another handful of chocolate chips with a little extra coconut oil and drizzle over the top of your brownies before tucking in.
