If you’re looking for a treat to satisfy your chocolate cravings, you’ve clicked on the perfect recipe! These super-decadent Collagen Brownies are a must-try – just ask Vital fan Amanda Chaplin (you can find her over on Instagram @theholistic.honey!), who shared this Vital Proteins® Collagen Peptides recipe exclusively with Lively.
“I have also noticed that adding collagen to baked goods, and any recipe in general, especially when gluten and grain-free makes all the difference,” Chaplin, who also loves adding collagen to her smoothies, tells us.
“In my experience, collagen makes gluten- and grain-free recipes denser, chewier and more indulgent.”
Intrigued? Can’t say we blame you. Keep scrolling to learn how to make them!
Collagen Brownies Recipe
*CONTAINS EGGS AND NUTS
12 collagen brownies
200g almond flour
2 handfuls dairy-free chocolate chips
2 tsp vanilla extract
Pinch of sea salt
50g coconut oil (melted)
60g peanut butter (melted)
180g coconut sugar
1 tsp baking soda
4 scoops Vital Proteins® Collagen Peptides
Preheat your oven to 180°C and line a medium-sized ovenproof dish with greaseproof paper.
Mix all of the wet ingredients in a large mixing bowl or in your standing mixer. Make sure that the eggs are at room temperature so that the coconut oil does not re-solidify once added.
Add in salt, collagen and baking soda and mix well. Add in the almond flour gradually, mixing in between each addition.
Pour the mixture into your ovenproof dish and add in a handful of the chocolate chips into the tin and bake for 45 minutes.
Optional topping: allow to cool, then melt another handful of chocolate chips with a little extra coconut oil and drizzle over the top of your brownies before tucking in.
