Collagen Brownies Recipe

- 12 collagen brownies
Ingredients
- 2 eggs
- 200g almond flour
- 2 handfuls dairy-free chocolate chips
- 2 tsp vanilla extract
- Pinch of sea salt
- 50g coconut oil (melted)
- 60g peanut butter (melted)
- 180g coconut sugar
- 1 tsp baking soda
- 4 scoops Vital Proteins® Collagen Peptides
Instructions
Preheat your oven to 180°C and line a medium-sized ovenproof dish with greaseproof paper.
Mix all of the wet ingredients in a large mixing bowl or in your standing mixer. Make sure that the eggs are at room temperature so that the coconut oil does not re-solidify once added.
Add in salt, collagen and baking soda and mix well. Add in the almond flour gradually, mixing in between each addition.
Pour the mixture into your ovenproof dish and add in a handful of the chocolate chips into the tin and bake for 45 minutes.
Optional topping: allow to cool, then melt another handful of chocolate chips with a little extra coconut oil and drizzle over the top of your brownies before tucking in.
